Learn how to make chorizo, salcicce fresco, cotechino and pancetta on this Southern European Charcuterie course with Charcutier Ltd. expert Pam Thompson.

This course focuses on charcuterie from Spain and Italy and you'll make these common culinary delights that will give your cooking a delicious taste of Southern Europe.

We strongly associate this region with hot summer sun, basking on beaches and indulging in meaty snacky delights found within cafe culture. This course certainly satisfies some of these sunny reminiscences. You’ll also discover some great winter warmers, including preparation and cooking of porcetta.

Pam has been teaching butchery since 2007 and cheese making since 2011. She's Technical Manager at Charcutier Ltd., a small, family run speciality meats business based on-farm in the Gwendraeth Valley in West Wales.
